Canadian chef creates taste sensations at gourmet resort

Lit by studio lights, Canadian chef Pierre Mourez beams out from a half-dozen giant television screens hanging from the restaurant's thatched roof.

Mourez is executive chef at an all-inclusive, adults-only gourmet hostelry, where cooking classes allow guests to bring back more than suntans to the chilly north.

Typically, many in his audience at this resort, 35 minutes south of Cancun on the Yucatan Peninsula, are on honeymoons or celebrating anniversaries. The well-travelled chef puts on a terrific show -- on this particular day finishing off his sea bass dish with a fiery splash of tequila.

Directing a staff of 75 chefs and 25 pastry chefs, Mourez creates a global array of menu choices for Eldorado Royale Hotel and Spa's seven restaurants. With the demands of 24-hour room service in the 600-suite property, along with running dining spots that specialize in Mediterranean, Asian, Oriental, and Mexican cuisine, you'd think he'd be too busy to give cooking lessons.
